  • 45 ml Aged Rum
  • 15 ml Cachaça
  • 22.5 ml Cynar Syrup
  • 30 ml Acidified Tomato Water
  • 3-5 drops MSG Saline Solution

Instructions

Build in a mixing glass, add ice, and stir until chilled. Strain over a large ice cube. Garnish with cherry tomatoes on the vine.

Savory daiquiri-style. Cynar syrup (~50 °Brix): blend 46 g sugar into 100 g Cynar on low until dissolved — or use 22.5 ml Cynar with 7.5–10 ml rich simple syrup (2:1). Acidified tomato water: quarter four medium tomatoes, blend with a pinch of sea salt ~30 s, strain (repeat straining if you want clearer liquid); add 2 g citric acid and 0.5 g malic acid per 100 ml strained water. MSG saline: dissolve 14 g sea salt and 8 g MSG in 100 g water.
