Ingredients

  • 3 Egg White
  • 3 Egg Yolks
  • 200 g Sugar
  • 15 ml Dark Rum
  • 1 pinch Cinnamon

Instructions

Whip egg whites to stiff peaks. Beat yolks with sugar until pale; stir in rum and cinnamon. Fold in whites until combined. Refrigerate.

Batch yields about 12 mugs at 45-60 ml batter each. Keeps about 2 weeks refrigerated.
