- 150 ml Tropical Berry Cordial
- 45 ml Reposado Tequila
- 5 ml Chile Liqueur
Instructions
Add cordial, tequila, and chile liqueur to a cream whipper. Charge with CO2, shake for 10 seconds, and release the gas. Charge again, shake, and rest in the fridge before serving.
Cordial: juice pineapple and strawberry at a 2:1 ratio. Take 25% of the juice and whisk in agar at 0.2% of total juice weight; boil, whisk back into the remaining juice, chill 1 hour until set, break the gel, and strain through cheesecloth. For each 500 ml clarified juice, add 52 g agave syrup, 3 g citric acid, 1.5 g malic acid, and 0.6 g salt. Yield about 70%. Source build uses green ancho liqueur.
