  • 1 handful Baby Arugula Leaves
  • 22.5 ml Honey Syrup
  • 22.5 ml Lemon Juice
  • 60 ml Olive Oil and Mozzarella Washed Gin

Instructions

Muddle arugula in the shaker. Add remaining ingredients. Shake with ice; strain into a glass.

Original riff inspired by the Roquette and green-and-white pizza. Fresh mozzarella wash gives green nuttiness on the nose, pineapple and Creamsicle notes, faint savory creaminess, and a nutty finish. Wash 50 g chopped fresh mozzarella, 30 ml olive oil, and 120 ml gin sous-vide at 60 C for 2 hours, then freeze and strain.
