- 150 g Celery
- 200 g Neutral Spirit (70% ABV)
- 75 g Sugar
- 40 g Water
- 1 g Citric Acid
- approx. 80 ml Water (proofing, after infusion)
Instructions
Combine celery, neutral spirit, sugar, water, and citric acid in a clipped bag. Sous vide at 60 °C for 3 hours; ice bath immediately. Strain through a coffee filter. Stir in about 80 ml water to proof down; adjust to taste.
