- 36 g Gum Arabic
- 60 g Boiling Water
- 3.6 g Methylcellulose
- 100 g Hot Water
- 200 g Cold Water
- 360 g Sugar
- 0.6 g Xanthan
Instructions
Hydrate gum arabic in boiling water for 12h. Blend sugar, xanthan, and cold water until dissolved. Mix methylcellulose with hot water, then stir in xanthan syrup. Combine with gum mixture, strain, and store in fridge.
