Ingredients

  • 200 g Lemon Peels
  • 125 g Sugar
  • 330 ml Vodka
  • 110 ml Water

Instructions

Combine lemon peels and sugar in an airtight container for 1 hour to create oleo saccharum. Add vodka and water, vacuum seal, and sous vide at 55°C for 4 hours, shaking every 30 minutes. Cool, strain, and filter. Alternatively, macerate in vodka for 4 days, then strain and dilute with water. Bottle and let develop for a few days.
